Sometimes you have to eat like a peasant. It's good for the soul. Today was a bastardization of escarole in chicken broth with cannellini and potatoes. The escarole looked like shit at the market today, so I'm using turnip green leaves. No pancetta, so I made some ciccioli from bits of fatback I had lying around, in which I fried minced garlic, diced potatoes, and well chopped turnip greens. Added the broth and beans with a tablespoon of Parmesan cheese and added some reserved egg wash from last night's cod. Pretty nice, considering. Would have preferred my Mom's, but fuck it, work with what you've got. #soup
